Pancho's was an all-you-can-eat restaurant chain founded in 1958 in El Paso, Texas. Although they billed themselves as a buffet, unlike actual buffets, additional food is brought by waitstaff rather than self-served. Pancho's fare included tacos, flautas, enchiladas, tamales, rice, refried beans, guacamole and many other traditional Tex-Mex items. One of the well known novelties of the chain was the small Mexican flag at each table that diners would simply have to raise to get service, be it a refill on their drink or another round of sopapillas.
